Special Culinary Event for Quivira Owners

Chef Billy Maldonado, who leads the Fónico restaurant in Mexico City, and who was selected as one of the ¨Best New Chefs” by Food & Wine in 2023, is noted for his innovative approach fusing Mexican cuisine with international influences. With hand-selected ingredients, he has established Fónico as a reference point in haute cuisine by embracing the diversity of modern Mexico. Maldonado’s culinary style evokes bold, authentic flavors in every bite.

Joining him will be Oscar Cortes, head chef at the Steakhouse, who will combine the bounty of the sea with an unparalleled blend of the fortunes of the land. He and Maldonado will blend flavors, art, and tradition to deliver a gastronomic delight for Quivira residents, guests, and local foodies.

The scene behind the bar will match that of the kitchen. Luis Miguel Cardona, head bartender at Rayo Cocktail Bar in Mexico City, recognized as one of “North America's 50 Best Bars” by Forbes and Bon Appetit, brings the alchemy of Mexican distillates to the table, including obscure spirits such as Pox, Tuxca, and Charanda. With more than 11 years of experience, Cardona uses little-known Mexican ingredients to create cocktails that pay homage to Mexico's history and culture, providing an experience that goes beyond taste.

Capacity is limited. There will be two seatings with 20 people in each seating.

Hours: Cocktails with mixology by Rayo at The Beach Club will start at 5:15 p.m. (first seating) and at 6:45 p.m. (second seating). Dinners start at 6:00 p.m. and 7:30 p.m.

Four-course menu:

  • Bluefin Tuna Noodles, yuzu spicy vinaigrette with habanero, fennel and avocado
  • Japanese Wagyu Ravioli with beet oil and light kale cream, served with loaf bread
  • Glazed Beef Brisket with 3 chiles, sweet potato and pistachio puree, Cotija cheese croquette, and roasted corn
  • Banana Panna Cotta with passion fruit, mango and lime compote, coconut and lemongrass sorbet

Price: $110 USD per person. Includes dinner, wine pairing and cocktail.
